Comal Mexicano
Comal Mexicano is an authentic Mexican “taquería” in the heart of Europe. The roots of Mexican cuisine rest on the almost infinite variety of tasty, well-seasoned combinations of meats, seafood and vegetables. These are then used as a filling for a delicious, handmade, warm corn or wheat tortilla. Tacos are at the heart and soul of Mexican culture. Our greatest joy is to honor and share the healthy, traditional ways our ancestors made that make up a true Mexican taco. We also include many modern variations in our wide range.

What is an original comal?

“Comal” is a smooth, flat hotplate. In Mexico it is used for the general preparation of various dishes, such as cooking tortillas, roasting a number of spices, pods and vegetables, and searing meat. The traditional comal is concave and is made from clay. Its manufacture and use is still widespread among the original Mexican peoples.

As its Aztec name “Comalli” suggests, the Comal and its usage have deep roots that go deep into Mexican ancient civilizations. However, it is also used extremely often in Central and South America. The comal is an essential tool in authentic Mexican cuisine.

Frequently asked questions

  • What does COMAL mean?
The word comal comes from the Nahuatl word "comalli" and refers to a flat, thin, disc-shaped utensil where tortillas are toasted or corn, tomatoes, chillies, etc. are roasted. The advantage of this utensil is that it transfers the heat from the flames of the fire very quickly to the food being prepared. Initially, the Aztecs made it out of clay, but now it is also made out of copper or iron sheets.
  • Why is Mexican cuisine an intangible heritage of humanity?
Traditional Mexican cuisine is a comprehensive cultural model comprising farming, ritual practices, age-old skills, culinary techniques and ancestral community customs and manners. It is made possible by collective participation in the entire traditional food chain: from planting and harvesting to cooking and eating. The basis of the system is founded on corn, beans and chili; unique farming methods such as milpas (rotating swidden fields of corn and other crops) and chinampas (man-made farming islets in lake areas); cooking processes such as nixtamalization (lime-hulling maize, which increases its nutritional value); and singular utensils including grinding stones and stone mortars. Native ingredients such as varieties of tomatoes, squashes, avocados, cocoa and vanilla augment the basic staples. Mexican cuisine is elaborate and symbol-laden, with everyday tortillas and tamales, both made of corn.
